    Talits Estate is a family-owned cellar door, vineyard and luxury holiday home in the Broke Fordwich winemaking region of the Hunter Valley.

     

    The estate sits on 50 acres of beautifully crafted gardens, olive trees and meticulously managed and award-winning Chardonnay, Merlot and Shiraz vines.

     

    The vineyard is James Halliday rated and has won
    multiple awards in boutique and Australian/NZ wine shows.

     

    The Winemaker Daniel Binet, has been twice nominated for The Wine Society’s Young Winemaker of the Year and Hunter Valley Rising Star and recently the Hunter Wine Excellence scholarship.

     

    The cellar door and guest house was designed by French architects and constructed by world-class craftsmen utilising the finest materials and adorned with European fittings, Talits Estate is a true Provençal masterpiece.

     

    Located in the most tranquil corner of the Hunter Valley, yet only 15 minutes from the commercial hub of Pokolbin.

    The cellar is open Friday-Sunday, wines are also available for purchase online or book a stay for the true Talits Estate experience.

    Talits Estate - Winemaker

    Daniel Binet is fast becoming one of the Hunter Valley’s most recognised young winemakers.

     

    Daniel has been a winemaker for over 17 years in the Hunter Valley wine region of New South Wales, Australia.

     

    Most of Daniel’s life has been dedicated to the growing, cultivation and making of wine. He has a natural palate for wine, which allows him to create wines with personality, structure and finesse.

     

    Daniel has been twice nominated for The Wine Society’s Young Winemaker of the Year and Hunter Valley Rising Star and recently the Hunter Wine Excellence scholarship.

     

    Daniel has extensive wine show judging experience, regionally, nationally and regularly travels internationally to judge, most recently to Shanghai and New Zealand.

     

    Under Dan's careful craftsmanship, Talits Estate has been awarded various awards at prestigious wine shows such as the Hunter Valley Boutique Winemakers Show and the Australian, New Zealand Boutique Wine Show.

     

    We feel very lucky to have Dan on the team and adore the wines he's creating with us.

in Piemontese. Growing Arneis is a real labour of love - notoriously challenging however the rewards are “bellissimo”. This medium-bodied wine boasts ripe pear, apple & floral notes with bright citrus zest & elegant acidity.

    In the foothills of Broke Fordwich, long hot summers produce premium Sangiovese & Merlot. Unlike our friends in Tuscany, we believe blending them 50:50 tastes just right. Gracefully old & low-yielding vines have produced a dry & savoury wine featuring balanced tannins & elegant notes of cherry, raspberry & tomato leaf. Can be enjoyed slightly chilled. Saluti!     Fairing from 50-year-old low yielding vines. Ripeness of fruit and high natural structured acidity inspire aromatics of lime sorbet, fresh minerals and a crisp palate of lemon zest and white grapefruit.

    This wine tests the greatest of wine enthusiast’s patience - carefully cellar and reap the rewards in 2040 (or perhaps don’t).

    “Blanc de Blancs” is the French term for ‘white from whites’ and refers to the classic Champagne style of sparkling wine (Méthode Traditionnelle) made entirely from chardonnay. The Chardonnay used in this wine is sourced from 40yr old vines.

    This Blanc de Blancs is fresh and lively with the palate displaying citrus, green apple and grapefruit characters with some yeasty overtones.

    It has a creamy mousse, a fine elegant bead and a crisp long finish. The wine underwent secondary fermentation in the bottle & was aged on lees for 7 years before riddling & disgorge.

    This wine pays homage to traditional Burgundian winemaking processes, malolactic fermentation and lees stirring have created a complex and layered palate of tropical fruits, brioche and subtle oak.

    This elegant and medium bodied Merlot was
    produced by award-winning winemaker, Daniel Binet.

    The wine is the result of a 10-day skin contact open
    vat fermentation, followed by a secondary malolactic fermentation and maturation in French Ermitage oak barriques over 15 months.

    The nose and palate suggest plum, blackberry and
    mint chocolate whilst having balanced tannins
    and acidity.

    This wine can be enjoyed now, but will develop over
    a number of years of careful cellaring.
